Gluten Free Bread
Ingredients: 1tsb coconut oil, 200g ground almonds, 50g coconut flour, 3 tbsp flaxseeds, 1 tbsp chia seeds, 3/4tsb salt, 1 tsb baking powder, 180 ml water, 3 eggs beaten, 1 tbsp clear honey
Pre heat oven 200/ 180 fan assisted and grease a loaf tin with coconut oil.
Sift the ground almonds & coconut flour into the bowl of a food processor fitted with a beating blade to get rid of any lumps. Add the seeds, salt & baking powder and process to mix together. Add eggs, coconut oil and honey and pour in the water, process for about 5 minutes to aerate the dough.
Spoon the dough into prepared loaf tin and level the surface with a pallet knife.
Bake in the oven for 20 minutes, then cover with baking parchment and bake for a further 20 minutes or until the bread is golden brown an dcooked though.
Transfer to a wire rack and leave to cool.
This is a fairly sweet bread and works really well as a tea loaf, just add fruit that you have soaked in tea into the dough before putting in the tin, add lemon or orange zest for extra flavour.
